  • You get 72 seconds per question, the pace of a 150-question paper in 3 hours. The timer runs in your browser and ends the sitting when it reaches zero.
  • Your score is set against the 55% SCFHS pass mark, the published figure for this exam. No other number is invented: there is no percentile and no pass probability.
  • At the end you see your score, your pace per question, every domain ranked weakest first, and the worked answer and source for all 25 questions.
  • You can mark each answer “sure” or “not sure”. Wrong answers you were sure about are shown first, because they are the ones you would not stop to check in the real exam.
  • Your last result is saved in your own browser only, so you can come back and compare. Nothing is sent to us.

What the real Food Safety Technician licensing exam looks like

The Food Safety Technician exam is a computer-based multiple-choice paper, published by one regulator: SCFHS (pass mark 55%). Every regulator's format, pass mark and fee is in the table below; confirm yours before booking.

Pass marks at a glance: exam codes and pass marks by regulator for every written exam in one sourced table.

Before you can book the exam at all you need Dataflow primary source verification of your degree, licence and experience, which typically runs several weeks. Candidates often underestimate this and end up sitting the exam sooner after study than they planned. Check where you stand with our free eligibility checker or confirm whether your title even requires an exam using the Prometric exam checker.

You get three attempts in total across all UAE authorities, not three each, under the Unified Professional Qualification Requirements. At roughly AED 880 per attempt, plus the licensing delay each failure adds to your visa and start date, the cost of going in underprepared is not really the exam fee.

How to use your mock score

These bands are set against the 55% SCFHS pass mark and match the verdict on your result screen. On 25 questions, a score near the pass mark has a 95% margin of error of about ±20 points, so treat the band as a direction, not a forecast.

Below 50%

Below the line

On this sample you would likely fall short of the 55% pass mark today. Do not book yet. Start with your two weakest domains from the result, then sit full-length papers until you clear the line with room to spare.

50% to 64%

Close to the line

A few questions decide it. On a 150-question paper, every 1% is one or two questions, so drill your weakest domains and build a margin on timed papers before you book.

65% and above

On track

Clear of the pass mark on this sample. 25 questions is a small sample, so confirm it over full-length timed papers before you book: stamina and pacing fail candidates who know the material.

Getting an honest score

  1. 1Sit it cold, once. Do not look anything up. A diagnostic you help yourself through tells you nothing. The number you get is only useful if it is honest.
  2. 2Read every rationale, especially the ones you got right. Getting a question right by elimination is not the same as knowing it. The worked reasoning is free, whether or not you buy anything.
  3. 3Work on your weakest domain first. The breakdown orders your domains worst first for exactly this reason. Studying what you are already good at feels productive and moves nothing.
  4. 4Re-sit under full exam conditions later. The real paper is much longer than 25 questions and stamina matters. The full bank's 3 to 6 papers are written for exactly this.

A worked Food Safety Technician exam question

Every question in the mock and in the paid bank is written to this standard: a clinical stem, four plausible options and the reasoning for the answer, with its source.

Food Equipment and Utensils

A bain-marie is set so that soup holds at 50 degrees C throughout service. What is the problem?

  1. A50 degrees C is in the growth range; hold hot food at 60 degrees C or aboveCorrect
  2. BNothing is wrong, because soup is a liquid and bacteria do not grow in liquids
  3. CThe soup will thicken and lose flavour, but it stays safe for several hours
  4. DThe unit should hold the soup at a continuous boil to keep it safe in service

Why: Bacteria multiply quickly between about 5 and 60 degrees C, so hot food must be held at 60 degrees C or above. Liquids support growth, quality loss is not the main issue at 50 degrees C, and a continuous boil is unnecessary and wastes the product.

  1. Question 1 · Food Equipment and Utensils

What is the correct order for manual warewashing in a three-compartment sink?

    1. ARinse, wash in detergent, dry with a cloth, then sanitise before storing
    2. BScrape, wash in detergent, rinse in clean water, sanitise, then air-dry
    3. CSanitise, wash in detergent, rinse in clean water, then dry with a towel
    4. DWash in detergent, sanitise, rinse in clean water, then dry with a towel
    Show answer and explanation

Correct answer: B. Scrape, wash in detergent, rinse in clean water, sanitise, then air-dry

Detergent removes soil first, rinsing removes detergent that would inactivate sanitiser, then sanitising and air-drying finish the process. Towel drying recontaminates clean items, and sanitising before washing is ineffective on soiled surfaces.

Reference: FDA Food Code (2022), manual warewashing

  2. Question 2 · Food Materials

On receiving a carton of frozen prawns, which finding best suggests that the product has thawed and been refrozen during transport?

    1. AA carton clearly printed with a batch number and a best-before date from the supplier
    2. BA solid block of ice at the bottom of the carton with prawns frozen into it
    3. CPrawns that are individually frozen and loose inside the bag with no lumps or ice
    4. DA light frost on the outer surface of the bag after it left the delivery freezer
    Show answer and explanation

Correct answer: B. A solid block of ice at the bottom of the carton with prawns frozen into it

Liquid that drained from thawing product and then refroze forms a block at the bottom, and prawns fused in it show a break in the cold chain. Light frost, loose individually frozen pieces and correct labelling are normal.

Reference: FDA Food Code (2022), receiving frozen food

  3. Question 3 · Food Poisoning

Four people develop flushing, headache and a rash within 30 minutes of eating tuna sandwiches. Which cause is most likely?

    1. ANorovirus passed from a food handler to the fillings
    2. BHistamine formed in tuna that was kept warm
    3. CSalmonella in the mayonnaise used in the sandwiches
    4. DVibrio parahaemolyticus in raw seafood used as the filling
    Show answer and explanation

Correct answer: B. Histamine formed in tuna that was kept warm

Scombroid poisoning arises when bacteria convert histidine in temperature-abused fish to histamine, which cooking does not destroy. The rapid onset of flushing and rash differs from infections with onset of many hours or days.

Reference: Jay JM, Loessner MJ, Golden DA, Modern Food Microbiology, 7th ed. (2005)

  4. Question 4 · Food Poisoning

A beef stew is cooked in a large pot, left to cool overnight on the counter and reheated at lunchtime. Cramps and diarrhoea begin 12 hours after eating. What failure best explains this?

    1. ASalmonella from poorly washed hands on the day before the meal was cooked
    2. BStaphylococcal toxin formed while the stew was reheated on a hot plate
    3. CNorovirus carried on the ladle by a cook who had recently been ill
    4. DSlow cooling let Clostridium perfringens spores germinate and multiply
    Show answer and explanation

Correct answer: D. Slow cooling let Clostridium perfringens spores germinate and multiply

Large volumes cool slowly, and perfringens spores survive cooking and grow in the warm stew. Onset of 8 to 16 hours with cramps and diarrhoea fits. Staphylococcal illness causes vomiting within hours, and the other options do not match the story.

Reference: Forsythe SJ, The Microbiology of Safe Food, 3rd ed. (2020)

  5. Question 5 · Food Equipment and Utensils

Which practice with a probe thermometer prevents cross-contamination?

    1. AWiping it on the apron after each use
    2. BRinsing it when it looks dirty
    3. CUsing it first on cooked food and then on raw food
    4. DCleaning and sanitising the probe between foods
    Show answer and explanation

Correct answer: D. Cleaning and sanitising the probe between foods

Probes touch the food, so they are cleaned and sanitised before the next item to avoid moving bacteria. An apron, occasional rinsing or a cooked-to-raw sequence moves contamination.

Reference: US FDA, Food Code (2022)

  6. Question 6 · Food Materials

Which food is a time and temperature control for safety food, which needs refrigeration?

    1. ADry lentils in a sealed bag
    2. BPickled vegetables in strong vinegar
    3. CCooked rice in a covered dish
    4. DSugar syrup in a closed bottle
    Show answer and explanation

Correct answer: C. Cooked rice in a covered dish

Cooked rice is moist, low in acid and rich in nutrients, so spores and bacteria multiply if it is kept warm. Dry, acidic and high-sugar foods do not support growth.

Reference: US FDA, Food Code (2022)

  7. Question 7 · Geographic Location

What is the best way to keep flies out of a kitchen?

    1. ALeave the back door open for ventilation
    2. BUse a bright light by the food area
    3. CFit screens and self-closing doors, and keep waste in lidded bins
    4. DSpray a space insecticide over the preparation area during service
    Show answer and explanation

Correct answer: C. Fit screens and self-closing doors, and keep waste in lidded bins

Physical proofing and removing waste attractants prevent entry and breeding. Open doors let flies in, light alone does not stop them and spraying over food contaminates it.

Reference: WHO, Five Keys to Safer Food Manual (2006)

  8. Question 8 · Sterilisation and Sanitation

A test strip shows that the quaternary ammonium sanitiser in a bucket is too weak. What is the likely reason?

    1. AThe solution is too fresh and has not yet reached its working strength
    2. BIt is over-diluted or used up by food residue, so it should be remade
    3. CThe strip detects chlorine, so the reading is not valid for this product
    4. DThe bucket is too clean, which stops the sanitiser from working
    Show answer and explanation

Correct answer: B. It is over-diluted or used up by food residue, so it should be remade

Sanitiser strength falls with dilution error or load of organic matter, so a weak reading means making a fresh solution at the correct strength. Fresh solution is active, and using the right strip is part of testing.

Reference: US FDA, Food Code (2022)

  9. Question 9 · Food Quality

To what core temperature should cooked, cooled food be reheated before it is served hot?

    1. ATo a core temperature of 75 degrees C or above
    2. BTo 60 degrees C, the same as the hot-holding limit
    3. CTo 50 degrees C, until it steams on the surface
    4. DTo 65 degrees C, measured on the surface of the food
    Show answer and explanation

Correct answer: A. To a core temperature of 75 degrees C or above

Reheating to a core temperature of 74 to 75 degrees C or above kills the vegetative bacteria that grew during cooling. 60 degrees C is only the hot-holding limit, and 50 degrees C or a surface reading does not show that the centre is safe.

Reference: US FDA, Food Code (2022), reheating for hot holding

  10. Question 10 · Food Poisoning

Which foodborne cause is typically linked to undercooked minced beef and can lead to kidney failure in children?

    1. AStaphylococcus aureus from skin and nasal carriers
    2. BClostridium perfringens from slowly cooled stews
    3. CShiga toxin-producing Escherichia coli, such as O157
    4. DBacillus cereus from rice left at room temperature
    Show answer and explanation

Correct answer: C. Shiga toxin-producing Escherichia coli, such as O157

Shiga toxin-producing E. coli, such as O157, can cause bloody diarrhoea and haemolytic uraemic syndrome in children after undercooked beef. The other organisms cause short toxin illnesses without kidney failure.

Frequently asked questions

Is this Food Safety Technician mock test really free?
Yes. All 25 questions, your score, the domain breakdown and the full worked answers are free, with no sign-up, no email and no payment. The paid Food Safety Technician bank is a separate, much larger set of 450+ questions across 3 to 6 papers at AED 199.
Are these real Food Safety Technician exam questions?
No. They are original questions written to the published Food Safety Technician blueprint and drawn from our full bank, not leaked or recalled items. Recalled questions breach exam security rules and are often out of date. These follow the exam's format and domain weighting.
What is the pass mark for the Food Safety Technician exam?
By regulator: SCFHS (pass mark 55%), each from the regulator's own exam documents. Regulators not listed publish no figure for this exam, so confirm yours before booking. Most report only pass or fail and never release your score, which is why a diagnostic like this is useful.
How long is the Food Safety Technician exam and how many questions?
SCFHS: 150 MCQs in 180 minutes, from each regulator's own exam documents. Regulators not listed publish no length for this exam, so confirm theirs in the current candidate bulletin.
What topics does the Food Safety Technician exam cover?
The published blueprint has 8 domains and 57 testable sub-topics. The heaviest are Food Materials (15%), Workforce (15%) and Sterilisation and Sanitation (15%). The full domain list with weights is on this page.
How is the full Food Safety Technician bank different from this mock?
This mock is 25 questions across 8 of the 8 blueprint domains, enough to rank your domains. The full bank is 450+ questions in 3 to 6 full-length papers of about 150 questions, covering every domain, with about 68 questions on Food Materials alone. Every question has a worked rationale and a reference. It costs AED 199, paid once.
What score should I aim for on this Food Safety Technician mock?
Aim for at least 65%, which is 10 points over the 55% SCFHS pass mark. Below 50% you would likely fall short today; between 50% and 64% a few questions decide it. On 25 questions a score near the pass mark has a margin of error of about ±20 points, so read it as a direction.
Does passing this mock mean I will pass the real exam?
No, and we will not claim otherwise. 25 questions cannot predict a full-length paper: the margin of error is about ±20 points. What it does reliably show is which blueprint domains you are weakest in, so you know where to start.
Which regulators is this Food Safety Technician mock for?
It is written to the shared Food Safety Technician blueprint, so it fits SCFHS. SCFHS publishes an exam for this exact title. What changes by regulator is the length, the pass mark and the local regulation questions.
How many attempts do I get at the real exam?
In the UAE, three in total across DHA, DOH, MOHAP and SHA under the Unified Professional Qualification Requirements, not three per authority. Each attempt costs roughly AED 880, which is why it pays to find your weak domains first.
