12 worked Food Safety Technician practice questions

Original exam-style questions from the bank, spread across the blueprint domains. They are not real or recalled exam questions. Try each one, then open the answer for the rationale and reference. None of them appear in the free mock exam, so reading them will not spoil it.

  1. Question 1 · Food Equipment and Utensils

Several diners vomit within 30 minutes of eating a tomato stew that was kept overnight in a galvanised bucket. Which cause is most likely?

    1. AHistamine from spoiled fish that had been added to the stew
    2. BStaphylococcal enterotoxin formed in the stew during the overnight storage
    3. CZinc dissolved from the galvanised container by the acidic food
    4. DEmetic toxin produced by Bacillus cereus growing in the warm stew
    Show answer and explanation

Correct answer: C. Zinc dissolved from the galvanised container by the acidic food

Acidic foods dissolve zinc from galvanised metal and cause vomiting within minutes to an hour. Staphylococcal and Bacillus cereus toxins usually take one to six hours, and histamine needs fish.

Reference: Jay JM, Loessner MJ, Golden DA, Modern Food Microbiology, 7th ed. (2005)

  2. Question 2 · Food Materials

A kitchen refrigerator holds ready-to-eat salad, cooked sliced meat, raw fish and raw chicken. Which shelf arrangement from top to bottom is correct?

    1. ACooked meat, raw chicken, salad, raw fish
    2. BRaw chicken, raw fish, cooked meat, salad
    3. CSalad, cooked meat, raw fish, raw chicken
    4. DRaw fish, salad, raw chicken, cooked meat
    Show answer and explanation

Correct answer: C. Salad, cooked meat, raw fish, raw chicken

Foods that will not be cooked again go highest, and raw foods go lowest in order of the cooking temperature they need, so drips from raw chicken cannot fall onto food eaten without further cooking. The other arrangements place raw juices above ready-to-eat items.

Reference: FDA Food Code (2022), food storage and separation

  3. Question 3 · Food Poisoning

A hospital kitchen supervisor reviews the menu for immunocompromised inpatients because of the risk of Listeria. Which food should be removed?

    1. AEggs that have been boiled hard and eaten the same day they were cooked
    2. BChicken that has been well cooked and is served hot straight from the oven
    3. CBread that has been toasted until crisp and served with hot soup
    4. DSoft cheese made from unpasteurised milk and chilled deli meats
    Show answer and explanation

Correct answer: D. Soft cheese made from unpasteurised milk and chilled deli meats

Listeria grows at refrigerator temperatures in ready-to-eat foods and in soft unpasteurised cheeses, and can cause miscarriage or neonatal infection. Foods cooked thoroughly and eaten hot are not typical sources.

Reference: Heymann DL (ed), Control of Communicable Diseases Manual, 20th ed. (2015)

  4. Question 4 · Food Poisoning

Fifteen canteen customers become ill with vomiting after the same lunch. What is the best first action by the food safety supervisor?

    1. AHold remaining food and samples, list those ill, and notify the authority
    2. BWait for laboratory results before telling anyone, so that no false alarm is raised
    3. CThrow away the remaining food at once so that others are protected
    4. DGive antibiotics to each diner who ate the lunch to prevent illness spreading
    Show answer and explanation

Correct answer: A. Hold remaining food and samples, list those ill, and notify the authority

Retained food and a case list let investigators identify the source, and the authority must be told early. Discarding evidence hampers investigation, antibiotics are not needed for toxin illness, and waiting delays control.

Reference: Heymann DL (ed), Control of Communicable Diseases Manual, 20th ed. (2015)

  5. Question 5 · Food Quality

A manager reviews weekly temperature records of the chilled display and checks thermometer calibration against a reference. Which HACCP principle is this?

    1. AVerification
    2. BMonitoring
    3. CHazard analysis
    4. DCorrective action
    Show answer and explanation

    Correct answer: A. Verification

Verification confirms that the system works through record review, calibration and audit. Monitoring is the routine measurement at the CCP, hazard analysis identifies hazards, and corrective action responds to deviations.

Reference: Codex Alimentarius, General Principles of Food Hygiene, CXC 1-1969 (Rev. 2020), HACCP annex

  6. Question 6 · Food Quality

Fresh fish fillets are sold in oxygen-free vacuum packs at chilled temperature. Which additional hazard needs control?

    1. AGrowth of non-proteolytic Clostridium botulinum if the cold chain breaks
    2. BFaster oxidation of the fish fat because of extra oxygen inside the pack
    3. CFaster enzymatic browning of the flesh while the fillets sit in the sealed pack
    4. DGrowth of moulds that need oxygen and spoil the fillets within a day
    Show answer and explanation

Correct answer: A. Growth of non-proteolytic Clostridium botulinum if the cold chain breaks

Low-oxygen packing suppresses spoilage organisms that would warn consumers, while non-proteolytic botulinum can grow slowly in cold, airless fish if temperature is abused. The other options need oxygen.

Reference: Forsythe SJ, The Microbiology of Safe Food, 3rd ed. (2020)

  7. Question 7 · Sterilisation and Sanitation

A customer vomits on the dining room floor beside occupied tables. What is the correct response?

    1. ACordon off the area, clean with disposable material, apply a chlorine disinfectant, and discard exposed food nearby
    2. BCover it with napkins and clean it after service
    3. CMop it with the usual mop and a general detergent
    4. DWipe it with a dry cloth and spray air freshener
    Show answer and explanation

Correct answer: A. Cordon off the area, clean with disposable material, apply a chlorine disinfectant, and discard exposed food nearby

Vomit can carry norovirus in droplets, so the area is isolated, cleaned with disposable items, disinfected with chlorine and nearby food is discarded. Delay, shared mops or air freshener spread or ignore the virus.

Reference: CDC, Updated Norovirus Outbreak Management and Disease Prevention Guidelines (2011)

  8. Question 8 · Food Poisoning

Pastry cream is reheated until it boils, but customers still vomit about three hours after eating it. The baker had an infected finger. Why did reheating not make it safe?

    1. ASalmonella spores survived the boiling
    2. BStaphylococcus aureus had already made a heat-stable toxin in the cream
    3. CBacillus cereus cells reproduced after boiling
    4. DNorovirus needs very high temperatures to be inactivated
    Show answer and explanation

Correct answer: B. Staphylococcus aureus had already made a heat-stable toxin in the cream

Staphylococcal enterotoxin is preformed in food and survives boiling, causing vomiting within one to six hours. The other options do not fit the short incubation or the source on the baker.

Reference: Jay, Loessner and Golden, Modern Food Microbiology, 7th ed. (2005)

  9. Question 9 · Food Quality

A cooking critical control point reads 68 degrees C against a critical limit of 75 degrees C. What is the correct corrective action?

    1. AServe the batch and check the next batch more closely
    2. BLower the critical limit to 68 degrees C for this product
    3. CContinue cooking until the limit is reached, then record the deviation and action
    4. DCool the batch and reheat it at the next service
    Show answer and explanation

Correct answer: C. Continue cooking until the limit is reached, then record the deviation and action

The product must reach the critical limit before it is released, and the corrective action is recorded. Serving, changing the limit or delaying the heating all leave a hazard uncontrolled.

Reference: FAO and WHO, Codex General Principles of Food Hygiene, CXC 1-1969, rev. 2020

  10. Question 10 · Workforce

A food handler is diagnosed with hepatitis A. Which measure best protects customers?

    1. AExclude him from food handling until a physician clears him
    2. BAllow him to work with ready-to-eat food while wearing gloves
    3. CMove him to wash dishes without a health check
    4. DLet him work if he feels well and has no diarrhoea
    Show answer and explanation

Correct answer: A. Exclude him from food handling until a physician clears him

Hepatitis A is spread by the faecal-oral route and the person is infectious before jaundice, so exclusion with medical clearance and hand hygiene are needed. Gloves or a change of task do not remove the risk.

Reference: WHO, Hepatitis A Fact Sheet (2023)

  11. Question 11 · Sterilisation and Sanitation

A cook says that boiling water sterilises feeding bottles. Which statement is correct?

    1. ABoiling for one minute destroys vegetative cells and spores alike
    2. BBoiling kills vegetative bacteria but spores can survive, so it is disinfection
    3. CBoiling sterilises if salt is added, because salt raises the boiling point
    4. DBoiling has little effect on the bacteria that are in the water
    Show answer and explanation

Correct answer: B. Boiling kills vegetative bacteria but spores can survive, so it is disinfection

Boiling at 100 degrees C destroys most vegetative organisms and viruses but resistant spores can survive, so it is not sterilisation, which needs steam under pressure. The other claims overstate or deny its effect.

Reference: WHO and FAO, Safe Preparation, Storage and Handling of Powdered Infant Formula: Guidelines (2007)

  12. Question 12 · Food Poisoning

A group of diners develops vomiting and diarrhoea 24 to 48 hours after a meal prepared by a sick cook. Which feature of the likely pathogen explains the spread to many people?

    1. AIt must multiply to a very large number in the food before it can cause illness
    2. BIt grows in refrigerated food and is killed at room temperature
    3. CIt is infectious at a very low dose and persists on surfaces and hands
    4. DIt is destroyed by a brief rinse of the food in cold water
    Show answer and explanation

Correct answer: C. It is infectious at a very low dose and persists on surfaces and hands

Norovirus has a very low infectious dose and persists on surfaces and hands, so a sick handler can infect many. It is not a bacterium that must multiply in food, and rinsing does not inactivate it.

Reference: CDC, Norovirus: Clinical Overview (2023)

Frequently asked questions

Are these real Food Safety Technician exam questions?
No. Every item is original, researched by Neelim's exam research team against the exam blueprint published by the health authorities. Real, recalled or leaked exam content breaches the testing bodies' rules and can lead to a permanent exam ban - we do not sell it, and neither should anyone else.
How many questions are in the Food Safety Technician bank?
Every bank starts at 3 full-length papers of roughly 150 questions each, the same length as the real computer-based exam, and you can add papers up to 6, including a bonus paper of our hardest questions. The papers do not overlap, so every question is new, and together they cover every sub-topic in the published blueprint.
How many attempts do I get?
In the UAE, three in total across DHA, DOH, MOHAP and SHA, not three each, under clause 1.5.4 of the Unified PQR (April 2025). Clause 1.5.5 allows one further attempt with a different authority, except on the Consultant route. Elsewhere in the GCC: SCFHS up to 4 a year, QCHP 5 per scope, OMSB no set maximum, Kuwait MOH 3, 6 weeks apart.
Does this cover DHA, DOH, MOHAP and SCFHS?
The core clinical knowledge is shared across the GCC; what differs by regulator is the test vendor (Prometric for DHA, SCFHS, QCHP, NHRA, Kuwait MOH; Pearson VUE for DOH, OMSB), the format, the pass mark and the local-regulation slice. This bank is prepared for the SCFHS exam.
How do I receive it?
As PDF files. Card checkout is being set up, so for now you request it from this page and we send it to you directly, usually the same day.
